Types of kangaroo on offer commercially

The kangaroo on offer commercially differs from the East Coast to the West.
NSW and Southern Queensland hunters harvest eastern grey kangaroos which are smaller and are generally regarded as inferior in meat quality to the Western Red of South Australian.

Tasmania harvests wallabies for their meat, wallaby shanks are a must try.

The main kangaroo cuts, strip loin, fillet and rump which are suited to barbecuing, pan frying, and stir frying. Also sold as diced meat or mince. Mince roo is best salted with soy sauce rather than salt as soy ads more moisture to the mince.

Cook any game meat, including kangaroo from rare to medium rare, no more.
